Keto and Low Carb diet

When I first started with a Low Carb or Keto diet back in 2013, I remember that it was pretty simple to find alternative options for dinner, but lunch and especially breakfast, were much more difficult – for breakfast, as example, I was used to eating bread, porridge and cereal. The switch therefore seemed quite challenging. Today, it’s easier for me to find alternative options as there is now greater choice available and more awareness through higher demand for such dietary needs. The trick is in the planning, you need to fill your cupboards and fridge with the right ingredients, then the world of Keto and Low Carb is much more accessible and easier to implement on a daily basis.
Last week, I made an amazing little dish that can be used both for a weekend breakfast and as a lunch option. A cheese and coconut omelet with mango and a mint salad to compliment. The best thing about this dish is how fresh and summery it feels with the mint and mango. A perfect way to start a sunny day.
This is what you will need (ingredients for 2 people – split the recipe in half if you are only one)
- 5 eggs
- 5 table spoons of Coconut Milk
- 2dl of grated cheese
- 1/2 tea spoon salt
- Butter
For the salad
- 1 small mango
- 50g green grapes
- Salad
- 10 mynthe leaves
- Feta cheese with olive oil
- Start with mixing the 5 eggs and 5 table spoons of colour milk in a bowl.
- Add a tea spoon of salt to the mix.
- Add a slice of butter to a frying pan and pre-heat the frying pan to medium heat.
- When the butter has melted, add the mixture of eggs and colour milk to the frying pan. Keep the heat at medium too low.
- Add the grated cheese on top. Make sure to do when the mixture is still liquid.
- While the omelet is in the frying pan, on medium to low temperature, cut up the salad, mango, green grapes and add it all into a bowl.
- Add the feta cheese with olive oil and add the chopped mint leaves. Mix it all together.
- When you see the omelet has become solid on top, flip one of the sides of the omelet on top of the other slide and cut it in two pieces (if you are making it for two). You should not be scared of letting it to really become solid if you have it on a low temperature.
- Place it all nicely on a plate. It works perfectly with some coffee, clouded apple juice or some lemonade with a lot of ice-cubes.
